There are multiple ways to do that
either when the hardware has support for that
* with SR-IOV+"classic" PCI passthrough
https://pve.proxmox.com/wiki/MxGPU_with_AMD_S7150_under_Proxmox_VE_5.x
* with vGPU passthrough
https://pve.proxmox.com/wiki/NVIDIA_vGPU_on_Proxmox_VE_7.x
you could also try with VirGl GPU, but this is more experimental
and you don't have gpu features such as vulkan/directx/cuda
(only opengl for now)
